So i'm looking at the Just Kampers website and a lot of their bits and pieces are different and depend on which "engine code" you have. So how do you tell?

Well i sort of answered my own question here, by looking on the vehicle's V5 (log book), it's the first 2 letters of the engine number ('DG' in my case).
Presumably this is the normal way of finding out?

DG is a 1.9 engine with designed for carbs. If this matches your engine then you have found your code. Another code which also match the 1.9 carb spec is DF. The DH engine is a 1.9 which can handle either carb or injection.

These code differences would probably have been a year specific variation/change of components or other such vw messings so be carful you check any parts will fit a DG engine.

When talking about type 1 engines alot of parts are interchangable regardless of engine codes but there are subtle differences.
